Panera Bread Panzanella - Italian Bread Salad

Our zesty Tomato Basil Bread pairs beautifully with fresh garden vegetables to make this tasty and refreshing accompaniment to summer meals.

Serves 4

4 cups 1/2" cubes of day old Tomato Basil Bread
2 cups seeded, diced tomato (1/2")
1 cup diced red or yellow pepper (1/2")
or peeled, seeded, diced cucumber (1/2")
1/2 cup tightly-packed slivered fresh basil leaves
1/2 cup finely-diced red onion

Vinaigrette:
1 cup extra-virgin olive oil
1 Tbs. balsamic vinegar
3 Tbs. red wine vinegar
Salt and pepper to taste

Whisk the vinaigrette ingredients until thoroughly combined. Combine the vegetables in a large salad bowl and toss with the vinaigrette. Add freshly ground pepper if desired. Add the bread cubes to the vegetable mixture and toss gently. Let sit 15 minutes before serving to allow the bread to soak up the dressing.
