Panettone in a Bread Machine

Prep time: 10 minutes * Cook time: Depends on machine * Makes 1 1/2-pound loaf


3/4 cup milk
1 egg
3 tablespoons butter, margarine or vegetable oil
2 tablespoons honey
3/4 teaspoon salt
2 cups bread flour
1 cup all-purpose flour
2 teaspoons anise seed
1 teaspoon active dry yeast or bread machine yeast
1/3 cup raisins
1/3 cup dried cranberries
1/3 cup chopped dried apricots


Set machine for a 1 1/2-pound loaf and basic light cycle. Add ingredients to machine according to manufacturer’s directions. At the beep (or during the last kneading, if your machine doesn’t beep), add the raisins, cranberries and apricots.

Per slice based on 16 slices: 145 cal.; 4 g pro.; 26 g carb.; 3 g fat (2 sat., 1 monounsat., 0 polyunsat.); 21 mg chol.; 120 mg sod.; 1 g fiber; 8 g sugar; 18 percent calories from fat.
