Parmesan Breaded Chicken

4 skinless and boneless chicken breasts
2 cups bread crumbs
2 Tbsp Parmesan cheese
1 tsp dried oregano
1/2 tsp dried basil
1/4 tsp salt
black pepper to taste
3 Tbsp flour
1 egg, lightly beaten
2 Tbsp olive oil

Place the chicken between sheets of plastic wrap and pound down to about 1/4-inch thickness.

Combine the bread crumbs, Parmesan, oregano, basil, salt and pepper; spread on a plate. Dredge the chicken in the flour, then in egg, and finally in seasoned bread crumbs.

In a large nonstick skillet, heat olive oil over medium heat. Sauté the chicken breasts for about 2 to 3 minutes per side, or until the chicken is cooked through.

Makes 4 servings.
