Pea Soup

Ingredients
◦1 lb of green split peas
◦5 cups of water
◦5 cups of chicken stock
◦1 large onion chopped
◦5 carrots diced
◦2 parsnips diced
◦1 stalk of celery diced
◦1 leak diced – white part only
◦4 cloves of garlic – minced
◦3 tablespoons parsley
◦1 bay leaf
◦3 teaspoons salt
◦2 large smoked ham hocks
◦1/4 teaspoon pepper

Instructions

1.Combine all in a large stock pot
2.Cover and cook on low for 3 hours.
3.Stir and skim foam frequently.
4.Pull meat off smoked pork hocks and put back in soup.
5.Soup can be served with croutons.
