Peeling potatoes

Don’t you hate peeling hot boiled potatoes for potato salad?
Here’s an easy way to do it.
Score the skin around the equator of a potato. Place in boiling water for 15 min. or so until cooked through. Remove from the boiling water and put into a bowl of ice water for 10 seconds. Remove and slip the skin off from center to both ends. It comes off intact.

Interesting, I’ll have to give it a try. I still do it the old fashioned way & play ‘hot potato’.

My question has always been," Why not peel them before you cook them for potatoe salad? You peel them before cooking for MAshed Potatoes or French Frys !

you are smart as i am too in favor of peeling them before boiling them and, by the way, the same cause would be served at its best

Peeling them before cooking can cause more moisture in the potatoes.
