Penne With Sausage & Spinach In A Parmesan Cream Sauce

1 Lb Penne
2 Tsp Extra Virgin Olive Oil
¾ Lb Sweet Or Hot Italian Sausage, Casings Removed
2 Lg Cloves Garlic, Minced
1 Lb Spinach, Stems Removed, Torn, Washed & Dried
1 Cup 35% Whipping Cream
1¼ Cups Freshly Grated Parmesan Cheese

Bring A Large Pot Of Water To A Boil. Add Penne & Cook Until Not Quite Al Dente, About 8 Minutes. Drain.

Meanwhile, Heat Vegetable Oil In A Large, Deep Skillet Over Medium Heat. Crumble In The Sausage & Cook, Stirring & Breaking It Up With The Back Of A Spoon, Until Cooked Through, About 7 Minutes. Add Garlic & Cook, Stirring, For 1 Minute. Add Spinach To Skillet In Batches, Adding More The Moment It Starts To Wilt & Leaves More Room In The Pan. Cook, Stirring Occasionally, Until Last Batch Of Spinach Is Just Wilted, About 4 Minutes. Stir In The Cream & Season With Salt & Pepper. Let Simmer For 5 Minutes.

To The Cream Mixture, Stir In 1 Cup Of Parmesan, & Then The Cooked Pasta. Cook For 2 Minutes More. Adjust Seasonings & Serve With Remaining Parmesan.

Tip: Be Sure To Cook The Pasta Until Not Quite Al Dente. It Will Finish Cooking In The Sauce.
