Pepper-Rubbed Steaks with Caramelized Onions

We will have this dish tonight with steamed broccoli florets, roasted garlic mashed potatoes, a garden green salad with home made vidalia onion dressing, sweetened iced tea and a slice of my home made Fuzzy Navel cake I made yesterday. YUMMY!!!

1 large Vidalia onion, thinly sliced separated into rings
1 Tbsp. sugar
2 Tbsp. water
1 Tbsp. Balsamic vinegar
1/2 to 1 tsp. seasoned pepper blend
4 boneless beef strip steak, 1/2 to 3/4in. thick, trimmed of fat.

Heat a 12 in. non-stick skillet over medium heat. Add just enough butter to brown the onions, cook 3 to 4 minutes. Stirring frequently, just until onions begins to brown. Stir in sugar and water. Reduce heat to medium-low cover and cook 6 to 8 minutes, stirring frequently, until onion is tender and golden. Remove from the heat; stir in vinegar.

Meanwhile, heat a George Forman grill for 5 minutes. Rub pepper blend on both sides of the steaks

When grill is heated, place each steak on bottom grill surface. Close the grill, cook 3 to 5 minutes or until desired doneness. Serve steak topped with the sweet onions.
