Pickled Shrimp Sea Island


1-1/2 cup oil
3/4 cups vinegar
1-1/2 tsp. sea salt
1-1/2 stone ground mustard
1/2 tsp. Tabasco or to taste
4 pounds cooked shrimp
8 small white onions, sliced very thin

into a dish that has a cover, place a layer of shrimp, then a layer of onions. Bring dressing to a boil and pour over shrimp and onions. cool. cover dish and let stand in refrigerator overnight. Place on large paltter with parsley to serve. This dressing can be strained and re-used, but all seasonings must be replace.
