Pigs In Potatoes

1/4 teaspoon onion juice
1 tablespoon minced parsley
1 egg yolk
2 cups mashed potatoes
6 to 8 cooked sausages (small links)
Dry breacrumbs
1 egg diluted with 2 tablespoon cold water

Add first 3 ingredients to mashed potatoes. Season if necessary. Beat thoroughly. Coat sausages with potato mixture; shape into croquettes. Roll in bread crumbs, dip in diluted egg, then roll in crumbs again. Dry in hot deep fat (375 F). Makes 6 to 8 croquettes.
