Pineapple Surprise Cake

Pineapple Surprise Cake
1 box pineapple cake mix
1 can crushed pineapple with juice
3 egg whites
1/3 cup applesauce

Frosting:
1/2 cup Crisco shortening
4 TB 1% milk
1 tsp. vanilla
2 cups powdered sugar

Thoroughly drain can of crushed pineapple and save juice. Mix pineapple cake mix according to directions on box, but substitute the 1 1/4 cups water with the pineapple juice and add water to make the full 1 1/4 cups of liquid, also substitute eggs with 3 egg whites and oil with applesauce. Mix well with mixer, and then gently fold in crushed pineapple. Pour into a buttered and sugared 9" x 13" pan.

Bake according to directions on cake mix box. Top will be lightly browned and a toothpick will come out clean when done. To make frosting, combine shortening, milk, vanilla and powdered sugar and mix well. Spread over cooled cake.
