Pizza Sandwiches

Pizza Sandwiches

1/2 tablespoon unsalted butter
8 slices whole-wheat bread
1 cup part-skim shredded mozzarella
16 thin slices of pepperoni
1/2 cup marinara or pizza sauce

Heat half the butter in a large skillet over medium-high heat. Place 4 bread
slices in the pan and move them around to coat with butter. Flip the slices
over and heat them, dry side down, for about 30 seconds. Flip the slices dry
side up and sprinkle 2 of them with 1/4 cup cheese each. Place 4 pepperoni
slices on top of the cheese. Top that with another heated bread slice,
buttered side up. Cook sandwiches until cheese melts and bread is light
golden brown, about 2 minutes per side. Repeat with remaining butter, bread,
cheese and pepperoni. Cut finished sandwiches into wedges and serve each
with 2 tablespoons marina sauce, for dipping.
