Lots of good plum flavour and a spicy bite in the sauce. Spoon sauce on chicken or rice.
3 lbs chicken parts, skin removed
3 jars of strained plums (baby food), 4-1/2 oz each (128 mL)
2 garlic cloves, minced
1 tsp ground ginger
2 Tbsp chili sauce
1 tsp lemon juice
1 tsp brown sugar, packed
1/2 tsp chili paste (optional)
Arrange chicken in single layer in 9x13-inch foil-lined baking dish that has been lightly sprayed with cooking spray.
Combine remaining 7 ingredients in small bowl. Pour over chicken, making sure to get some on each piece. Bake, uncovered, in 350 F for about 50 minutes, basting 3 to 4 times with sauce during last half of baking time. Serves 4.
