This recipe is used for low - budget cooking in my high school class- Great for college students too.
2 cups of any chopped fresh vegetables (broccoli, cauliflower, celery, mushrooms,
1 carrot sliced thin
2 pkg. Ramen Noodles with seasoning packet
1 chicken breast (optional) stir fry in 1 T oil with 1 clove garlic)
2-3 T soy sauce
1 2/3 cup water.
If using chicken cut in small pieces stir fry with garlic until no longer pink
Peel carrot and cut vegetable into small pieces.
Break up Ramen noodles. Pour in a bowl and set aside.
Spray pan with vegetable spray and heat pan for 30 seconds. Add vegetables and chicken. Stir fry for about 1 min.
Stir broken noodles and seasoning packet and water. Simmer, covered for 3-5 minutes or until the liquid is gone.
Add Soy sauce. Serves 4-6.
You can use the beef Ramen noodles with 1/2# ground beef or the
shrimp Ramen noodles and add shrimp. This recipe works for leftover meat also.
