Pork and Beans Spice Cake with Cream Cheese Frosting

Ingredients

Cake
2 cups sugar
1 cup vegetable oil
4 eggs
2 cups King Arthur all purpose flour
2 tsp baking soda
2 tsp cinnamon, ground
1 tsp baking powder
1/2 tsp salt
1 (16 oz) can,pork and beans, drained
1 (8 oz) can crushed pineapple, drained
1 tsp apple pie spice

Cream Cheese Frosting
1/4 cup softened oleo or butter
8 oz cream cheese, softened
16 oz confectioner’s sugar
2 tsp vanilla extract
1/2 cup pecans, finely chopped

Instructions

Cake

  1. Heat oven to 350 degrees F.
  2. Sift together flour, baking soda, cinnamon, apple pie spice, salt and baking powder.
  3. Add eggs and oil.
  4. Blend until smooth.
  5. Remove large, solid, chunks of pork and discard. Blend drained, “pork and beans” with mixer until smooth.
  6. Add crushed and drained pineapple and pork and beans to batter and blend.
  7. Pour into greased 9” x 9” pan or Bundt pan.
  8. Bake for 40 to 45 minutes.

Cool and frost with cream cheese frosting.

Frosting

  1. Blend butter, cream cheese, sugar and vanilla until smooth.
  2. Spread on cooled cake and sprinkle with chopped pecans.
  3. Add a “dollop” of freshly whipped cream if desired, before serving.
