Pork and Potato Stuffing

My mother makes this every Christmas. This is an approximate estimate of her recipe that she gave me for my daughter’s school fundraising cookbook. She “eyeballs” all her recipes! Adjust seasonings to your taste. She uses turkey broth that she makes from the turkey neck, onions, etc.

1 lb ground pork
Cooked mashed potatoes
1 medium onion, chopped
1 celery stalk, chopped (optional)
½ tsp sage (or to taste)
Garlic, to taste
Up to ½ cup chicken or turkey broth
Salt and pepper, to taste

Brown ground pork with onion, celery, and garlic with about 2 Tbsp of broth. You do not want to fry it dry; you want to keep the mixture moist. Add about ½ cup chicken or turkey broth and mashed potatoes; stir well to combine. (Use an equal amount of meat and potatoes, and enough broth to have a moist mixture.) Pour into a covered casserole dish and bake in a 300 F degree oven for about 35-40 minutes. You don’t want it to dry out.

NOTE: If using this recipe to stuff a bird, use less broth.
