Pork & Cashew Teriyaki Stir Fry
16 Oz. Pork Chops, cooked & cut into cubes
1 Cup Carrots, chopped
1-1/2 Cups Mushrooms, chopped
1 Cup Bell Pepper (any color), chopped
1/2 Cup Onion, chopped
3/4 Cup Cashew Pieces
1/2 Cup Light Teriyaki Sauce
Heat a large frying pan or Wok on high. Add carrots (no oil required) and cook for about 4 minutes. Add the bell pepper and cook for another 3 minutes. Add the mushrooms and onions and cook for 4 minutes. Add the pork cubes and teriyaki sauce. Lower heat to medium and cover. Let simmer for about 5 minutes. Serve immediately as is or over wild rice.
