Pork Fajitas

Makes 4 servings

1 medium yellow summer squash, halved lengthwise, and sliced
1/4-inch thick
1 medium zucchini, cut into thin strips
1/3 cup chunky salsa
12 oz. lean boneless pork, cut into thin strips
1 small onion, cut into thin wedges
1/4 tsp. fajita seasoning or seasoned salt
1/4 tsp. pepper
8 6- or 8-inch flour tortillas
Sour cream, optional

  1. In the bottom dish of the Meals in Minutes™ Family-Size Microsteamer, combine yellow squash, zucchini and salsa. In the colander insert, combine pork and onion; sprinkle with fajita seasoning. Place colander insert in bottom dish. Cover and microwave on High, 7-9 minutes, stirring pork mixture once, until pork is cooked through.

  2. Wrap tortillas in microwave-safe paper towels and add to microwave during the last 2 minutes.

  3. To serve, stir meat mixture into squash mixture. Spoon meat mixture over tortillas. Top, if desired with sour cream and roll up.
