Pork Tenderloin au jus Sandwich

Pork Tenderloin au jus Sandwich

1/2 teaspoon beef bouillon granules 1/2 teaspoon paprika
1/8 teaspoon salt
1/2 pound pork tenderloin sliced 1/4" thick
6-8 mushrooms thinly sliced
2 green onions
1/2 teaspoon butter
2 crusty rolls or toasted whole wheat bread

Stir together bouillon granules, paprika and salt in microwave-safe 9-inch
pie plate. Add pork tenderloin slices, turning to coat both sides evenly
with paprika mixture. Cover with plastic wrap; vent one corner. Microwave on
Medium-Low (30% power, about 200 watts) 4 minutes; turn slices over,
rearranging so least-cooked parts are to outside edges of dish.

Recover and continue microwaving on Medium-Low 3 to 5 minutes. Let stand,
covered, 3-5 minutes.

Meanwhile, place mushrooms and chopped white part of onions in
microwave-safe measure; top with butter and cover with plastic wrap.
Microwave (High) 45-60 seconds or until mushrooms are tender.

Arrange tenderloin slices on tops and bottoms of rolls; spoon mushrooms over
tenderloin; sprinkle with finely chopped green part of onions. Spoon meat
and mushroom juices over sandwiches or combine juices and pass to serve.
