Pork Tenderloin

Made some Stove Top Turkey Stuffing, added a grated apple, some thyme and sage. Set aside to cool.

Butterflied a pork tenderloin. Pound with a tenderizing hammer until about 1/4-inch thick. Place cooled stuffing on tenderloin and roll (didn’t need toothpicks or string). Brushed on some Heinz Chili Sauce and baked in 400 degree oven for 30 minutes until internal temp reached 160. Basted again with chili sauce halfway through cooking.

Served this with baked potatoes and orange-glazed carrots.

Was pretty good! Husband and daughter devoured the tenderloin!

I wanted to add a few dots of butter on top of the stuffing before rolling it, but I forgot.

Instead of chili sauce, I was going to roll it in Shake 'n Bake Pork Chop Coating Mix, but I didn’t have any of that either! LOL Maybe next time. :lol:
