3 Pounds Yukon Gold potatoes
1 Cup chopped celery
1/2 cup chopped spring or sweet Texas onions
1/2 cup low fat margarine
2 teaspoons salt
1 Tablespoon chicken seasoning
Tabasco
1 cup low fat half and half
1/2 cup corn starch
Peel potatoes and cut in medium size pieces. Place in 3 quart boiler. Add enough water to cover potatoes good ( about 1 1/2 quarts or more.) Add celery, onion, salt and chicken seasoning. Cook slowly until potatoes are tender ( about 30 minutes.) Add half and half, margarine and Tabasco. Mix corn starch with enough water to make to make a thick paste. Mis until all corn starch is smooth. Add some of the soup to this and then add this mixture back into the soup. Cook slowly and stir often to keep from sticking.
