Power Pancakes

4 fresh California nectarines, divided
2 cups reduced fat all purpose baking mix
1 1/2 cups apple juice
1 lightly beaten egg
nonstick cooking spray

  1. Chop about 1 nectarine to make 1 cup. Slice remaining nectarines and set aside.

  2. In medium bowl, combine baking mix, juice and egg until just moistened. Stir in fruit.

  3. Heat griddle or skillet over heat; coat with cooking spray. Spoon 1/2 cup batter onto griddle; spread out mixture slightly with back of spoon. Cook until small bubbles form on top and underside is golden brown. Turn pancakes and cook until brown.

  4. Place pancakes on plate and top with nectarine slices.
