Prawn Salad Rolls

8—10 Minutes

30 cooked prawns, coarsely chopped
1 celery rib, finely chopped
2 green onions, finely chopped
1/2 c light mayonnaise
Salt and pepper to taste
lemon juice and Tabasco to taste
4 panini or hot dog buns
2 T butter, melted
4 lettuce leaves

Preheat the oven. Combine all ingredients, except buns, butter and lettuce, in a bowl. Split the buns and butter the cut sides. Bake the puns on a baking sheet 8-10 minutes, until lightly browned. Set a lettuce leaf in each bun, and then spoon in prawn mixture. Serve immediately. Makes 4 servings.
