Pumpkin Harvest Cookies - 2 dozen
1 cup shortening
1 cup sugar
1 cup canned pumpkin
1 egg
2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup chopped pecans
1/2 cup craisins
Beat shortening, sugar and pumpkin. Add egg. Combine flour, baking soda, cinnamon, and salt; add to pumpkin mixture. Stir in nuts and cranberries. Drop by spoonfuls onto a cookies sheet. Bake 12 minutes at 375°.
