If you love the flavor of pumpkin and creamy desserts are a pleasure, you’ll enjoy this one.
Pumpkin Mousse
1 (15oz) can pumpkin puree
1 sm box, instant vanilla pudding
1 C milk
2-3 t cinnamon (or to taste)
1 pt whipping cream
1/2-3/4 C super-fine sugar
1 t vanilla
In a mixing bowl combine pumpkin,
pudding and milk and stir until smooth.
Chill in frige for one hour. Chill a second
mixing bowl and beaters till cold. Pour cream,
vanilla and sugar into chilled bowl and
whip cream untill you have firm but
soft peek consistancy. Cream should
stand up in mounds. Fold whipped cream
into pumpkin mixture, gently, until
there are no white streaks. Spoon into
individual dessert dishes or just let
mousse rest in a serving dish and
let family serve themselves. Enjoy 8)
