Quick Onion Kuchen

(4 servings)

2 tbsp butter
4 large onions, sliced
2 eggs, beaten
1 cup sour cream
1/4 tsp salt
Freshly ground pepper to taste
1/2 tsp caraway seeds (optional)
4 slices of rye bread
2 to 4 slices of bacon, halved

Preheat oven to 375 F.

Heat butter, add onions and sauté until tender.

Mix eggs, sour cream, salt, pepper and caraway seeds.

Place bread in shallow greased baking dish and cover with onions.

Pour sour cream mixture over onions and place bacon on top.

Bake until bacon is crisp, about 25 minutes. Serve piping hot.
