Rainbow Streusel Coffee Cake

3/4 cup (1 1/2 sticks) butter, divided
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
2 1/2 cups all-purpose flour, divided
1 tsp baking powder
1 3/4 cups M&M’s chocolate mini baking bits, divided
4 Kudos milk chocolate granola bars
1/2 cup firmly packed light brown sugar

Preheat oven to 350 degrees F. Grease 9 inch springform pan.

In large bowl cream 1/2 cup butter and granulated sugar until light and fluffy; beat in eggs and vanilla.

In medium bowl combine 2 cups flour and baking powder; blended into creamed mixture. Do not overmix. Stir in 3/4 cup M&M’s chocolate mini baking bits. Spread batter into prepared pan.

In separate bowl combine chopped Kudos milk chocolate granola bars, remaining 1/2 cup flour, brown sugar and 1/4 cup melted butter, to create streusel. Add remaining 1 cup M&M’s chocolate mini baking bits and toss mix. Sprinkle streusel over batter.

Bake 35 to 40 minutes or until golden brown and firmto the touch. Cool
completely before removing side of pan. Store in tightly
covered container.

Makes 12 slices.
