Red Robin Strawberry Lemonade
Lemon Syrup:
- 1 ½ cups sugar
- 1 ½ cups water
- Zest of 1 lemon, cut into thin strips
Strawberry Syrup:
- ½ cup sugar
- 1 pint strawberries, hulled and chopped
Lemonade:
- 2 cups fresh lemon juice, pulp strained
- 2 cups cold water
- ¼ teaspoon kosher salt
-
Make the lemon syrup: In a medium saucepan, combine the sugar, water, and lemon zest. Bring the mixture to a boil, stirring to dissolve the sugar.
-
When the sugar is dissolved, remove the pan from the heat and let it cool to room temperature. Remove the strips of lemon zest.
-
Make the strawberry syrup: Combine the strawberries and sugar in a small bowl. Stir the mixture with a wooden spoon, then set it aside for 45 minutes to let the sugar dissolve in the strawberry juice.
-
Strain the mixture, reserving the berries and juice separately.
-
Make the lemonade: In a large pitcher, combine the lemon syrup, lemon juice, salt, and cold water.
-
Fill a tall glass with ice and add a tablespoon of the strawberry syrup. Fill the glass with the lemonade, stir, and add a few of the reserved strawberries
Makes 8 to 10 servings
