Roast Beef with Horseradish Sauce

This is sooo easy and sooo yummy…
We have leftovers the next day on toasted sub rolls and dip in leftover au jus.

1/2 tsp garlic powder
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp salt
1/2 tsp pepper
1 (3 lb) eye of round roast
Horseradish Sauce

Combine seasonings in a small bowl, and rub mixture over entire roast. Place roast in a 3-4 qt slow cooker (cut in half if necessary). Cover and cook on low for 8-10 hours.

Remove roast to cutting board, reserving juices in slow cooker. Let stand 15 minutes; cut diagonally across the grain into thin slices. Serve with Horseradish Sauce and au jus (with meat juices).

Horseradish Sauce

1 (8 oz) carton sour cream
1/2 cup mayonaisse
1 Tbsp prepared horseradish
1 tsp beef bouillon granules
1/8 tsp garlic powder

Combine all ingredients in small bowl; cover and chill.

I doubled the garlic and added crushed red pepper flakes, this was good.
Next time I will add more horseradish to the sauce, this one did not have enough bite for my family.
