Here’s a quick snack for the kids when they get home from school!
Salchitacos.
They’re kind of a mexican style corn dog.
l you do is heat up a skillet or frying pan with enough oil to cover the bottom of the pan. Then, heat up a few tortillas in the microwave for about 20 seconds so they are soft enough to wrap the hot dogs. WRap each hot dog and place them with the open side down so it fries first and secures the dog inside. Or use a toothpick to prevent the salchitaco from opening. Place them on a plate and cover with sliced lettuce, tomatoes and onion. You can buy a can of Walmart enchilada sauce to pour over the salad and then dallop it off with sour cream. Quick and delicious!
I was just talking to lvdkeyes about “chutney” and it reminded me of this easy chicken recipe.
8 chicken pieces
1 packet of brown onion soup powder
(I use 45g Royco)
1 cup of mayonnaise
1 cup of fruit chutney
1 cup of boiling hot water
Place the chicken in an ovenproof dish. Mix the soup powder with the water, add the mayonnaise and chutney to it, mix again and pour over the chicken.
Bake for 1 hour @ 180˚C/350˚F. Cover for first 30 min. Uncover for last 30 min and baste. A sticky layer will form on the chicken, with a yummy sauce around it. Serve with rice and veggies.
