Salmon croquettes, salad w/Italian dressing, creamed onions and a piece of fruit for dessert.
1 12 oz can pink salmon
1/4 cup chopped onion
1/4 cup all purpose flour
2 Tbsp yellow corn meal (optional)
Salt & pepper to taste
Pour all of the ingredients into a large bowl and mix well. Add the flour last to adust the amount to control the consistency. Roll into a 2-3 inch ball and mash into a patty shape (like thick homemade hamburgers).
Coat a frying pan with a little cooking oil. Preheat the oiled pan over medium heat. Slip the patties into the pan, fitting as many as you can but don’t crowd them. Cook until medium brown on one side, then turn over and cook the other side.
Drain on paper towels or a large brown paper bag.
Note: These are also great grilled on the counter top grills. Spray grill well with nonstick cooking spray.
