Salsa Chicken Recipe

2 skinless boneless chicken breasts seasoned with salt, pepper and paprika
1 T. olive oil
1/2 C. Salsa

Spray a small casserole or baking pan with Pam. Preheat oven to 375 degrees. Heat the olive oil in a non-stick skillet on medium high. Sear the chicken breasts until brown on both sides. Put the chicken in the casserole. Top with the salsa. Cover and bake for 20 minutes.

The chicken will be very moist and delicious. Serve with refried beans, Spanish rice, black beans, Mexi-corn, and/or warm tortillas.
