In a crockpot, place 4 chicken breasts. Cover with 1 cup salsa. Cook on low for 6 hours. (I use frozen breasts). Remove chicken from pot. Let cool. Shred with two forks. Add chicken back to pot. Add additional salsa, can of pineapple tidbits and 2 TB lime juice. Serve over rice or wrapped in warm tortilla.
Do you have a favorite salsa that you use with this?
I’ve tried something very similar with Pace picante salsa. It was good but left something to be desired. i would experiment with different kinds if you have the chance.
if your local grocery store carries it the GARDEN FRESH line of salsas are OUT OF THIS WORLD. I am going to pick up the Peach Mango and try this recipe this weekend.
