San Antonio Skillet Supper
2 lb smoked sausage or Kielbasa
1 cup white rice
1 can stewed tomatoes, 14 1/2 oz.
1 cup water
3 cup Picante Sauce
1 can dark red kidney beans, 8 oz,
Cut sausage in half lengthwise, cut crosswise in 1/4 inch slices. In 10" skillet, combine rice, sausage and remaining ingredients except optional toppings; mix well, breaking up tomatoes with large spoon. Bring to a boil. Reduce heat, cover and simmer 20 minutes.
Remove from heat, let stand covered 5 minutes.
Top as desired and serve with additional picante sauce.
