Sausage Bread Casserole

1 pound breakfast sausage, cooked, drained and crumbled
4 cups cubed day-old bread
2 cups cheddar cheese
1 cup mozzarella cheese
2 cans Evaporated Milk
1 large red bell pepper
1 onion
12 large eggs
1 tsp dry mustard
1/4 tsp onion powder

Preheat your oven to 350.
Grease the pan.
Beat 6 eggs with 1 can of milk and mix with cheese until well combined.
Layer bread cubes to the bottom of a 13 x 9 casserole dish, then top with vegetables and cover with eggs cheese mixture.
Add sausage.
Beat 6 eggs with 1 can of milk then pour over the sausage layer. Cover evenly and poke with a fork all around the pan.
Top with shredded mozzarella cheese.
Bake for 40 minutes or until brown.
Servings: 8

Note
You can substitute ricotta for the cheddar, and top with cheddar. You can also use smoked sausage slices.
