Excellent Recipe for canning peppers!
2 cups vegetable oil
2 cups sugar
2 cups vinegar
2 cups ketchup
Bring to a boil and then turn down and simmer for 20 minutes.
While simmering, cut caps and remove seeds from peppers. Stuff with sausage.
Place stuffed peppers in jars and pour sauce over peppers, leaving one inch of headspace.
Bake in oven at 225 degrees for one hour. Lids will seal as jars cool.
