Savannah Red Rice

Savannah Red Rice

1/4 pound slab bacon, finely diced
1 small red pepper, diced
1 small green pepper, diced
1 rib celery, diced
1 medium onion, diced
2 cloves garlic, minced
2 cups long-grain white rice
2 cups crushed, canned tomatoes
2 tablespoons tomato paste
1 1/2 cups water
2 teaspoons hot sauce
Coarse salt and freshly ground pepper

  1. Using a large heavy-bottomed saucepan, cook bacon over medium-high heat until crisp
  2. Add red and green peppers, celery, onion, and garlic
  3. Cook, stirring, 3 to 4 minutes
  4. Add the rice and stir to coat
  5. Add tomatoes, tomato paste, water, and hot sauce
  6. Season with salt and pepper
  7. Reduce heat to medium low
  8. Cover and simmer until the rice is tender and liquid is absorbed, about 20 to 25 minutes
