School Cafeteria Chicken Sandwich Spread
50 Servings
8 c. chicken, finely cut
4 c. celery, finely cut
4 T. parsley, chopped
2 T. lemon juice
1/4 c. cream, light
4 T.cream cheese
3/4 c. mayonnaise
2 T.salt
Mix chicken, celery, parsley and lemon juice. Mix cream into cream cheese
and mayonnaise. Combine mixtures and chill. Serve on sandwich bread or
put into small Parker House rolls or cream puffs.
