School Cafeteria Ham Salad Sandwich

2 oz. protein per serving
8 lbs. ham, chopped
1 qt. celery, chopped
2 T. parsley
4 c. cream cheese
1 c. mayonnaise
3 T. lemon juice
1/2 c. light cream
Blend all ingredients together and chill. Spread on buttered bread. Use
#24 scoop (1.5 ounces - 3 tablespoons) to measure.
