Seafood in Ramekins

(4 servings)

5 tbsp butter
1/2 cup raw shrimp, cut into bite-size pieces
1/2 cup crabmeat, flaked and picked over well to remove any bits of shell or cartilage
1/2 cup bay or sea scallops, cut into bite-size pieces
1 tbsp finely chopped onions
2 tbsp sherry
1/2 tsp salt
1/4 tsp freshly ground pepper
3 tbsp flour
1-1/2 cups milk
1/2 cu breacrumbs
1/4 cup grated Parmesan cheese

Preheat oven to 400 F.

In large skillet, heat 2 tbsp of butter, add seafood and onions and cook 4 minutes, stirring occasionally. Sprinkle with sherry, salt and pepper.

In saucepan, melt remaining 3 tbsp butter, add flour and stir with whisk until blended. Meanwhile, bring milk to a boil and add all at once to butter-flour mixture, stirring vigorously with whisk until sauce is thickened and smooth. Combine sauce with seafood mixture.

Spoon mixture into individual buttered ramekins or shells and sprinkle with crumbs mixed with cheese.

Bake 10 to 12 minutes, or brown under broiler. Garnish with lemon wedges.
