I wanted to share a breakfast recipe that is very popular in the local fire stations. It’s a real favorite of the firefighters in the Indianapolis area.
The original recipe called for one pound of country sausage, crumbled and browned with the grease left in the skillet to fry the potatoes. But the firefighters, like many of us, are striving for a healthier diet so this is a much healthier version of the recipe. The sausage and grease are left out completely because no one needs all that fat and cholesterol.
Sewer Lid
4 to 5 large potatoes, sliced
olive oil
18 large eggs
1 diced red bell pepper
1 diced yellow or green pepper
1 diced white onion
2 cans diced tomatoes, drained
1 can black olives, drained and sliced
8 ounces sliced fresh mushrooms
16 oz. cheddar cheese
cracked black pepper and salt
Fry the potatoes in olive oil until browned.
Crack all of the eggs into a large bowl and beat until the eggs are well mixed. Add milk if you desire fluffy eggs but not too much for this dish. Add peppers and onion to the eggs and mix in. Sprinkle salt and cracked black pepper lightly over the eggs. Pour the mixture into the skillet.
Layer the tomatoes, mushrooms and black olives on top. Sprinkle the shredded cheese over the top.
Place the skillet into the oven and bake at 350 degrees until the mixture is cooked solid all the way through. Remove from oven and cut into slices and serve.
I like to top this dish with sliced of fresh tomato just before serving.
