Shaker Lemon Pie

I got this recipe when I was traveling.m We visited the shaker Village in Kentucky. I tried it for the first time this week and my family loved it. I recommend Myers Lemons.

2 large lemons. I used at least another half because the Myers are small.
2 cups sugar
4 large eggs

Slice lemons as thin as paper, rind and all. Combine with sugar: mix well. Let stand at least 2 hours. overnight is even better, stir several times. Add beaten eggs to the sugar and lemons. Pour into a unbaked 9-inch pie shell. Spread lemons out and they will raise to the top. Recipe says to cover with another crust. However I did not do that. It. Bake at 450 for 15 minutes and then at 375 for about 20 minutes. I served mine with whipped cream. Enjoy! Let me know how you liked it.
