Shrimp and Okra Gumbo

6 cups water
1 pkg. (9-oz.) frozen okra, thawed
1 cup canned tomatoes crushed
1 pkg. Zatarain’s Gumbo Mix with Rice
1/2 cup finely diced green bell pepper
1/2 cup finely diced celery
1/2 cup finely diced onion
2 lb. medium shrimp, peeled and deveined

Place all ingredients, except shrimp in Dutch oven on high heat. Bring to a boil, reduce heat to low, cover and simmer 25 minutes, stirring occasionally.

Add shrimp and mix well. Cover and simmer 10 minutes or until shrimp turn pink.

This is good served with dilled creamy coleslaw, Hush puppies and sweetened iced tea.
