Shrimp Curry

This is a very good dish and I have revised it over the years now it is exactly the way we like it.

2 sweet onions, chopped
3 Tablespoons canola or sunflower oil
3 Tablespoons flour
1 teaspoon curry powder
1 cup water
1 pound raw shrimp, cleaned
3/4 teaspoon salt
1/2 cup raisins
1/2 lemon. juiced and zest
dash pepper
2 cloves

Cook onions in 3 Tablespoons oil for 5 minutes. Mix in flour, curry powder, salt pepper, water, raisins, cloves. Stir until thick. Add lemon juice and zest and raw cleaned shrimp. Cover and cook slowly 15-20 minutes. Serve with rice and assorted accompaniments for curry. Serves 4

NOTE: I have used the frozen shrimp but it is rather watery tasting not as good as the fresh shrimp
