Shrimp Dip, Strip Steaks, Red Potatoes and Spinach Salad

Herbed Shrimp Dip (I am cutting the recipe in half)

1 lb cooked shrimp
2 green onions coarsely chopped
1 shallot chopped
2 Tbsp fresh tarragon chopped
1 cup mayo
1 cup sour cream
1/2 tsp Worcestershire
1/2 tsp hot pepper sauce

Place shrimp in food processor. Add green onion, shallots and tarragon and pulse until shrimp are finely chopped. Transfer mixture to a bowl and add remaining ingredients. Chill 2 hours. Serve with potato chips.

Grilled Strip Steaks - marinated in Worcestershire, lemon pepper and garlic salt

Parsley Red Potatoes

2 tsp olive oil
1 garlic clove minced
2 cups small red potatoes quartered
1 1/2 Tbsp fresh parsley chopped
1/4 tsp salt
dash of crushed red pepper

Heat oil in skillet, add garlic and cook 1 minute, add potatoes and cook until tender (about 18-20 min) stirring frequently. Stir in parsley, salt and pepper.

Spinach Salad - with strawberries, sliced red onion, toasted almonds and a purchased vinaigrette.
