Shrimp Martini Glasss with Vodka Martini
3 T. extra virgin olive oil
16 – 16 to 20 count Shrimp…raw cleaned and deveined with tails on.
16 large wild mushrooms
2 green onion……chopped
3 T. lemon juice
¼ c. vodka
¼ c. dry vermouth
2 T. chipped Italian parsley
1 T. butter
salt and pepper to your taste or use sea salt
Olives on toothpicks for garnish
Martini Glasses
Large sauté skillet… heat olive oil over high heat… Add raw shrimp- mushrooms- gr. onions and cook for 2minutes or until shrimp is partially cooked .
Remove skillet from heat and add lemon juice… vodka - vermouth - parsley and carefully return to fire since the vodka will flame.
Simmer over medium heat for 1 to 2 minutes or until liquid is reduced to about 4 Tbls. Season with salt and pepper
Serve 4 shrimp on each Martini glass and divide mushrooms and sauce amongest the 4 glasses . Garnish with olives - Black or green olives
