Shrimp -n- Scallop Seviche

Impress your family and friends

1/2 lb. of large shrimp…cleaned…rinsed…deveind…tails off
1/2 lb. sea scallops…raw…cleaned
1/3 cup fresh lime juice
2 T. each: olive oil-fresh orange juice-fresh chopped cilantro
1 medium size tomato…diced
1/4 cup finely chopped red onion
1/4 cup black olives … chopped fine…drained well
3 to 4 tsp. minced fresh jalapeno or serrano chile
1/4 tsp. salt
Lettuce leaves
1 avocado
1 lime

Cut Scallops crosswise into 1/8 inch thick slices…place in a shallow bowl
Cover with lime juice…press scallops in an even layer so all slices are submerged in juice…cover and refrigerate until scallops are opaque…maybe 4 hours or as long as overnight

Cooked large shrimp with tails off…rinse really good if store brought.
In a large bowl…combine: olive oil-orange juice-cilantro-tomato-onion-black olives-chile -shrimp.

Drain scallops…reserving 3 T. of the marinade . Add scallops-reserved marinade …salt into bowl …stir gently to mix.

Cover …refrigerate until ready to serve…Chill well

Arrange lettuce leaves in 6 cocktail glasses. Half…seed and peel avocado. Cut each half into 6 slices…cut lime into wedges.

Garnish each serving with avocado and lime on top of the cocktail glass

Makes 6 servings or 3 cups
