INGREDIENTS:
2 rib eye steaks cut 1-inch thick (approx 1 lb)
1 tablespoon olive oil
1 tablespoon fresh lemon juice
2 tablespoons crumbled feta cheese
1 tablespoon chopped olives
Seasoning:
1 1/2 teaspoons garlic powder
1 1/2 teaspoons dried basil leaves
1 1/2 teaspoons dried oregano
1/2 teaspoon salt
1/8 teaspoon pepper
Directions:
Combine seasonings and press on both sides of beef. In an iron skillet, heat oil over medium heat until hot. Sear steaks in skillet turning once (approximately 1-2 minutes on each side). Remove from heat and place under broiler in oven for 2-3 minutes on each side for medium rare (adjust for desired doneness). To serve, sprinkle with lemon juice, feta cheese and chopped olives (optional).
Yield: 2-4 Servings
