Smoked Mustard Glazed Ham

1 5 to 7 lb Ham fully cooked bone-in
1 onion quartered
2 carrots quartered
3 bay leaves
1 tablespoon ground allspice
1 teaspoon black pepperscorns
– Glaze –
1 cup apricot preserves
2 tablespoons Dijon mustard
2 teaspoons mustard powder
4 tablespoons whole grain mustard
4 tablespoons orange juice

Place ham in a large pot in and cover with cold water. Add onion, carrots, bay leaves, allspice and
peppercorns. Bring to a boil then reduce heat cover and simmer for 20 min.

Place the ham in a roasting pan to cool. When cool use a knife to score the ham in a diamond pattern.
Combine all the glaze ingredients in a bowl. Brush glaze on the ham and let set at room temperature for
1-2 hours basting frequently.

Place ham in preheated 225 degree smoker with wood chips of your choice. Cook for about 2-3 hours
or internal temp reaches 160 degrees. Baste with the glaze mixture at least two times while cooking.
