Smoked Turkey and Bleu Cheese Pasta Salad
1 1/2 cup dried tiny bow ties pasta or small shells
1/2 cup crumbled bleu cheese
1/2 cup balsamic vinaigrette or oil and vinegar salad dressing
6 ounces smoked turkey, cut into bite-size pieces
1 1/2 cups torn endive and/or radacchio
1/4 cup pecan pieces, toasted
1 (11oz) can of mandarin orange sections
Cook past aaccording to package directions. Drain in colander, rinse w/ cold water, and drain again. For a quick chill put drained pasta in freezer for a few minutes.
In a large bowl, combine bleu cheese and vinaigrette. Add turkey, endive, and pecans. Just before serving add chilled pasta; toss to gently to coat. Top each serving w/ orange sections.
If I don’t have mandarin oranges on hand, I’ve also have used sliced avocado.
