Sour Cream Pork Chops

4 pork chops 2 T. oil 8 oz. sliced mushrooms 1 c. beef broth 2 T. mustard 2 T. chopped parsley 1 t. paprika salt and pepper to taste 1 onion, sliced 1 c. sour cream
Salt and pepper chops. Brown chops in oil in skillet. Add mushrooms the last 3 minutes. Combine broth, mustard, parsley, and paprika.Place onion slices over chops. Pour broth mixture over chops. Simmer 1 1/2 hrs. or until tender. Stir in sour cream and heat 10 minutes. Serve over buttered noodles. Rice would also be good. Served with corn on the cob and tossed salad.
